One of the best ways to prepare chicken. The tangy lemon, the sweet roasted onion and the exotic taste of the cumin and red hot pepper provide chicken with huge amount of aroma. I found the idea here.
- 4 chicken legs or wings
- 3 red peppers, deseeded and cut into stripes
- 1 lemon, sliced
- 2 large onions, sliced
- 5 garlic cloves, minced
- 2 Tbsp white wine vinegar
- 1 tsp sea salt
- 1 Tbsp ground cumin
- 1 1/2 Tbsp hot paprika
- 3 Tbsp olive oil plus more for oiling the pan
Preheat oven to 220°C (425°F).
Make a paste from the garlic cloves, vinegar, salt, cumin,
paprika and olive oil. Coat onion with some of the paste and rub chicken with
the rest of the paste.
Oil a roasting pan and put chicken pieces in it. Cover
with the onion, peppers and slices of lemon. Roast for 45-60 minutes, basting
occasionally with pan juices.
