Cold cucumber soup (Tarator)


Tarator is one of the most typical dishes of Bulgarian cuisine. It is a cold soup based on the combination of yogurt, cucumbers and garlic. Some olive oil, dill and crushed walnuts are the recommended additions to this summer dish which slakes the thirst in the hot summer days. 


Ingredients:
  • 2 large cucumbers, peeled
  • 3 garlic cloves, minced
  • 3 Tbsp fresh dill, fine chopped
  • 4 cups yoghurt (about 1 kg)
  • 1 Tbsp crushed walnuts (optional)
  • 3 Tbsp olive oil
  • salt to taste
Preparation:
Peel cucumbers and chop into very small dices. Mince garlic cloves, sprinkle with the salt and olive oil and add to the cucumbers. Add yoghurt, walnuts and chopped dill and some cold water to adjust density according to your taste. Keep into refrigerator until ready to serve. Serve with an ice cube in every bowl.

  2. awesome! It's always nice to see someone posting Bulgarian recipes online! And by the way if you are not a fan of the walnuts I would skip them. I hate having them in my tarator so I just do it without them. Another advice - if you have family members that frown upon the idea of 'yogurt soup' you can do it without the water and then it's more like a salad rather than a soup.:)
