This is a healthy gluten free bread which holds the taste of nuts and grains. Recipe is from here.
- 1 cup sunflower seeds
- 1/2 cup flax seeds
- 1/2 cup almonds
- 1 1/2 cup rolled oats
- 4 Tbsp psyllium seed husks
- 1 tsp sea salt
- 1 Tbsp honey
- 3 Tbsp butter
- 1 1/2 cups water
Combine all the dry ingredients in a bowl, mixing well. Put honey and melted butter into a bowl with the water and after stirring to let the honey dissolve into the water, add liquid to the dry mixture. Mix well with a spoon and pour into your baking tin, smoothing out the top with a spoon as shown in the picture. Let sit for some hours or overnight.
Preheat oven to 350°F (180°C). Cover the bottom and two of the sides of your baking tin with baking paper, place on medium rack and bake for 30 minutes. Remove bread from the tin carefully, turn it upside down and place it directly on the rack. Bake for additional 30 minutes.
Check whether the bread is done by tapping it - if it sounds hollow, it is time to take it out of the oven. Cool for at least an hour and slice.
