Crispy Chicken Cracklings, Beer and the Joy of Indian Summer

It is Indian Summer outside, there is no doubt. 
The weather got unexpectedly warm after two weeks of freezing morning temperatures and biting winds, swirling tree leaves in the air. Sunshine came out of the grey clouds some days ago, but people did not have much trust in this change and put on their warm jackets again. But, the sun was even warmer on the next day. And so, mistrustful at first, but more and more relaxed over time, people started taking off the layers of blouses they had under the jackets and the time of T-shirts was back again. And the time of long talks in the gardens and yards, parks and restaurants over a glass of beer or two. 
Which reminds me, that I have a recipe to share. 
Crispy chicken cracklings - something delicious, cheap and easy to make.

Here is the recipe which celebrates the Indian Summer:
Chicken Cracklings
Ingredients:
  • chicken skins
  • salt 
Chicken SkinsPreparation:
Rinse skins and spread every one of them between two layers of paper towels to soak up their moisture. They should be really dry.  
Preheat oven to 400°F (200°C).
Lay skins over a baking tray covered with parchment paper. They should not overlap each other. Sprinkle some salt above and cover with another parchment paper and another baking tray. Put something heavy and ovenproof above (like cast iron skillet, pizza stone or whatever you have on hand). Slide into the oven and roast for 40 minutes. Check for readiness by lifting the upper tray. If done, they will be crisp and golden.
Drain off the fat which was rendered on the bottom tray, put chicken cracklings on a paper towel, put a clean sheet of paper onto the baking tray and another batch of skins.
Cool for some minutes and serve. With a glass of beer, yes.

  1. The crackly, crispy chicken skin on a roasted bird is my favorite part, so I'm pretty sure I would devour these in a nanosecond. That photo of the skins all stretched out on the tray is strangely beautiful!

  2. We have the same weather here, Meli. So warm and beautiful. I love chicken but never tried chicken cracklings before. I bet they are amazing snack!

    1. It is so good that despite the huge ocean which divides us geographically, there are so many things, which we are feeling the same way, Yelena! This is a little bit messy dish with all the fat rendering on the baking tray and the many batches which have to be prepared, but it is totally worth it. Kisses
