Tabbouleh is a Middle Eastern Salad, in which the main ingredients are parsley, bulgur and tomatoes.

Ingredients:
- 1/2 cup bulgur (cracked wheat)
- 3 medium tomatoes, diced into small cubes
- juice of 1 lime (or to taste)
- 5 Tbsp olive oil
- 1 medium onion, chopped finely
- 1 garlic clove, minced
- 1 bunch fresh flat-leaved parsley, finely minced
- 2 Tbsp fresh mint, finely minced
- salt to taste
Soak bulgur in one cup of hot water, cover and set aside to cool for one hour. Stir it with a fork from time to time to help it fluff up. Drain softened bulgur and put in a bowl. Add tomatoes, chopped onion and garlic to the bowl, pour dressing (olive oil and lime juice) over it and stir to combine. Add minced parsley and mint and sprinkle with salt.
