This is a quick and easy Spanish dish which has the taste of Pimentón which blends so well with the garlic aroma and the potatoes. For more spicyness I usually sprinkle some hot fresh pepper slices above. Other tasty dishes with Chorizo I prepare often are Fried prawns with Chorizo and Pizza with Chorizo, prawns and Mozarella.
Ingredients:
- 2 fresh Chorizo sausages, sliced in 3/4-inch pieces
- 3 medium potatoes, peeled and cut into 1-inch (2.5 cm) cubes
- 5 Tbsp olive oil
- 1 cup hot water
- 3 gloves of garlic, minced
- 1 Tbsp hot smoked Spanish paprika
- 1 Tbsp fresh thyme, chopped
- 2 hot peppers, sliced
- Salt to taste
Heat olive oil into a large non-stick pan on medium heat and
add chorizo. Chorizo will give off its golden color to the oil. Cook for 2 minutes, remove with slotted spoon and set aside. Add potatoes, water and salt to the oil and cook for 20 minutes
stirring occasionally. Potatoes will get crispy crusts and tender and fluffy insides.
Make sure potatoes are ready and all the water has evaporated and stir in
garlic and the paprika. After a minute add the fried chorizo and thyme, stir
for 2 minutes and serve with some slices of hot peppers above.

ReplyDeleteGood food, recipe put together in an awful manner. Chorizo sausages vary; 9 oz? 12 oz? The preparation is very vague and does not elaborate about much of the process.
