These cookies are crunchy. And buttery. And salty. And all this makes the chocolate even more obvious and tasty. The recipe yields 8 cookies and this is the place I saw it.
- 210 g (7.4 oz) flour
- 8 Tbsp butter (4 oz or slightly less than 120 g)
- ½ cup sugar
- ½ cup brown sugar
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 Tbsp vanilla extract
- 1 egg
- 180 g (1 ½ cups) good quality 70% cocoa chocolate, chopped in 1/4 inch cubes
Preheat oven to 350º F (180º C).
Sift flour and mix it with baking
powder, soda and salt. Beat butter with both sugars and the egg until obtaining
a homogenous mixture. Add vanilla, mix and start adding the dry ingredients
(the flour mixture). Add chocolate pieces and stir to incorporate.
Line two cookie sheets with parchment
paper. Divide mixture into eight balls and put four of them on the first sheet
- there should be some space between them otherwise they will stick to each
other. Bake for 12 minutes until the edges become golden. Enjoy with a cup of
coffee.
