Gingerbread men cookies without molasses

Merry Christmas, everyone! I wish you holidays with lots of sweets and a Happy New Year! 
Here is a recipe for gingerbread cookies men without molasses. This is the source for the recipe (in Bulgarian).






Ingredients:
  • 2 1/2 cups flour (285 g)
  • 1 tsp backing powder
  • 1/2 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 2/3 cup honey (220 g)
  • 1 stick (125 g) chopped butter at room temperature
  • 1 egg





Preparation:
Preheat oven to 350 F (180 C).
Sift in a bowl flour, baking powder, baking soda, ginger and cinnamon. 
Meanwhile warm up honey on a double broiler for 5 minutes, add chopped butter, remove from heat and stir well to incorporate. After additional 5 minutes add egg, beat well with a handheld mixer and slowly add the dry flour mixture. 
You will obtain a soft shortbread dough. Put in a plastic wrap and refrigerate for at least 3 hours - the harder the dough gets, the easier it will be for processing further. 
Take dough out of the fridge, place on a baking paper, dust top of the dough with little flour and roll until 1/8-inch (0.3 cm) thick. Cut cookies with a floured cutter, make a hole into each one gingerbread man's head and place each one on a cookie sheet, remaining enough space between them (about an inch/ 2-3 cm). Work fast, if the dough gets too soft, it will spread into the oven and the gingerbread cookies will loose their shape. 
Bake until light golden - about 10 minutes.
Take out of the oven, let cool (they are soft while hot and  they will break if you try to transfer them to a plate, so be patient).
Decorate the cooled cookies with royal icing and enjoy!
