Zucchini with Tomatoes and Hot Peppers

With the beginning of the first warm days here, we've started preparing one of the family's favorite summer dishes - zucchini with tomatoes and hot peppers, prepared in a saute pan. The dish is really simple and easy to prepare and is filled with the flavours of the fresh vegetables. It is so low in calories, that no matter how much you eat, you will weight less on the next day.

Russian Salad Bulgarian way

Russian salad with some slices breadNo, this is not the recipe for Salad Olivier, although many of the recipes for Russian salad throughout the Internet refer to it as if both salads were one and the same.
Frankly said, I don’t think anybody prepares Salad Olivier at home (or anywhere at all) nowadays.
Salad Olivier was created (predictably) by a Belgian or French chef Lucian Olivier back in 1860. 19 century was obviously tolerating mayonnaise, salads with mayonnaise were seen as more sophisticated - for reference see the original recipe for Waldorf Salad.
Unlike Waldorf salad, created in New York, Russian Salad Olivier was invented in Moscow. It was not intended to be a simple everyday meal – it contained boiled veal tongue and grouse (a type of bird), crawfish tails and aspic.
Boiled potato The salad called Russian salad nowadays and served widely around the world represents a distant echo of Olivier Salad and although this is one of the recipes which are not followed exactly and which contain varying ingredients according to the local taste or the ingredients available, it still shall contain mayonnaise, pickled cucumbers, boiled carrots and potatoes. Many people add diced ham, boiled eggs, apples. I prefer the version without them.
And actually this is the recipe perceived as Russian salad in Bulgaria.

Crispy Chicken Cracklings, Beer and the Joy of Indian Summer

Crispy Chicken Cracklings
It is Indian Summer outside, there is no doubt.
The weather got unexpectedly warm after two weeks of freezing morning temperatures and biting winds, swirling tree leaves in the air. Sunshine came out of the grey clouds some days ago, but people did not have much trust in this change and put on their warm jackets again. But, the sun was even warmer on the next day. And so, mistrustful at first, but more and more relaxed over time, people started taking off the layers of blouses they had under the jackets and the time of T-shirts was back again. And the time of long talks in the gardens and yards, parks and restaurants over a glass of beer or two.
Which reminds me, that I have a recipe to share.
Crispy chicken cracklings - something delicious, cheap and easy to make.

Roasted Hot Peppers

Roasted hot peppers
How hot should a hot pepper be? According to me - very, very hot.
There is the so called Scoville scale method, measuring the amount of the capsaicin - the chemical compound, which irritates our mucous membranes and wakes our pain receptors.

It is said, the burning sensation, provided by capsaicin is addictive. According to the theory, the pain induced by eating chilies makes our brain produce endorphins, which create a temporary feeling of euphoria. Heart rate increases, metabolism increases, salvation increases - the whole body is involved.

This mild addiction makes me want to have hot peppers with every meal (even with the breakfast sandwich, I admit).

There are many hot peppers varieties in Bulgaria - a real treasure for the lovers of the hot taste. Roasted chilies are served in nearly every restaurant as an appetizer or a spicy addition to the main course.

The taste of roasted hot peppers is softer than the fresh ones. Peppers for roasting should be fresh and crisp and for this recipe chilies should have soft skins, bearing in mind they are not peeled after roasting.

Eggplant Involtini with Ricotta and Goat cheese

Eggplant InvoltiniThe first time I tasted involtini was some months ago in one of the small restaurants in Little Italy in New York. We were thirsty and hungry and tired from all the strolling through the streets and the smell in the air around this restaurant made us stop, sit and wait impatiently for all the tasty homey food we ordered. I do not remember the name of the restaurant, but I remember very well the taste of the eggplant involtini - the  thin slices of eggplants wrapped arond a ricotta and goat cheese stuffing. Here is my interpretation of the recipe:

Taramosalata

Have you heard about the omega-3 acids? Of course you have. These unsaturated acids are included in many facial products and are sold separately as food supplements. Human body can not generate them and this is the reason why we reach for the foods which are known for containing them.
Doctors claim, our bodies need them for growth and development and they protect us against stroke and heart disease. Omega-3 acids affect mood in positive way by beating depression and lowering the symptoms  of the attention deficit hyperactivity disorder (ADHD).
Omega-3 acids can be found in varying concentrations in the fish roe of the different varieties of fish. And since ancient times, long before anybody has thought about omega-3 acids and their health beneficial properties, people have enjoyed the salted fish roe of different types of fishes, because it is very, very tasty.
The roes of Beluga, Ossetra, Sevruga, Salmon, called caviars are delicacies, which have no place on the common people everyday's table. But the fish roe of many other fish varieties is eaten in many countries of the world, salted, fried or processed in another way.
Greeks and Bulgarians love to eat taramosalata. This is a spread, prepared from salted cod  fish roe. You can find taramosalata in the menu of nearly every Greek reastaurant. In Bulgaria you can find taramosalata in the big food chains, but my mummy has always prepared home-made taramosalata, because it is far better.
This creamy smooth paste, result of emulsification of roe with olive oil, lemon juice and onion, requires a lot of bread. One slice as an ingredient of the recipe to make mixture less greasy and to provide puffiness to it. But also far more slices to be covered with this delicious spread. This is my mother's recipe for preparing taramas:

Cheese sticks

Cheese sticksThese cheese sticks are irresistible. Their salty taste is welcome on the table with a bowl of soup, with a glas of beer or inbetween two spoons of sweet dessert. Recently I hosted a ladies' party with lots of sweet treats and I was looking for something which will act as the coffee beans in the perfume shops, something which cleans the previous tastes and gives vent to another ones. I made these sticks.
One portion at first.
Second portion after I ate the whole first batch still hot.
Believe it or not, these sticks became the stars of the party.
Cheese sticks preparation
The recipe is from one of my very favorite blogs - Alexandra cooks.
Usually the first time I prepare somebody else's recipe, I follow the amounts of ingredients strictly and next time I adjust them to my taste. This time there is no need of such adjustments - these sticks are perfect, so I recommend you to follow the exact amounts of the ingredients, as follows:

Crispy fried zucchini (κολοκυθάκια τηγανητά)

Crispy fried zucchini
I love the taste of fried zucchini. And what makes them so lovable? Their crispiness. Fried zucchini should be hot and crispy. If you have an opportunity to travel to Greece, you definitely should try the fried zucchini served in most of the restaurants and they will never disappoint you. κολοκυθάκια τηγανητά have crispy crusts tender insides.

Chorizo with potatoes

This is a quick and easy Spanish dish which has the taste of Pimentón which blends so well with the garlic aroma and the potatoes. For more spicyness I usually sprinkle some hot fresh pepper slices above. Other tasty dishes with Chorizo I prepare often are Fried prawns with Chorizo and Pizza with Chorizo, prawns and Mozarella.

Cretan Dakos - Cretan rusk salad

Suchlike Panzanella - the Italian bread salad, Cretan rusk salad (Kρητικός ντάκος) is based on bread.
In fact, it is a large barley rusk topped with chopped tomatoes, crumbled Feta or Mizithra cheese and some olive oil. People in Creta and especially the sailors, used to eat a lot of rusks. Main reasons - rusks are lighter than fresh bread and more of them could be laded on the ships. They are unexpensive and long-lasting and do not get mouldy which is important on any island where every product is limited. Cretan dakos is still one of the traditional Cretan salads. If you do not have rusks on hand, you can use toasted or grilled bread - taste is nearly the same.

Roasted eggplant dip (Kyopoolu)

One of the main characteristics of the cuisine of the Balkans is the wide variety of salads. Countries in the region have hot and sunny climate and vegetables grow full of taste. But this is only one of the reasons for the huge consumption of salads here. The heart of the matter is that we start lunch and dinner with hard alcoholic drinks. Rakia in Bulgaria, raki in Turkey, ouzo and tsipouro in Greece are national drinks served at the beginning of the meal. These strong drinks go well with salad. Kyopoolu - a roasted eggplant dip, is one of the most popular Bulgarian summer salads, although it has a Turkish origin. The typical smoky taste of its roasted skin, the soft inside which absorbs a lot of olive oil and salt, the freshness of grated tomatoes and roasted peppers, the garlic as an ingredient make this dip irresistable.

Mussels marinara

Mussels marinaraMarinara is one of my favorite sauces for mussels. Marinara means 'sailors' style' in Italian, so probably the sailors preferred to have mussels that way. Because of the wine as an ingredient. Or because mussels get hot and full of flavors. Mussels marinara are usually served over boiled linguine, but I love them so much, that I skip the pasta and sip the sauce of the mussels right from the shells. Or enjoy to wipe up the spicy sauce with a slice of crusty bread.

Garlic and hot pepper prawns (Gambas Al Ajillo)

Summer arrived officially. Along with the swimming and diving this means to me a lot of seafood on the table. Shrimps are common guests home, but this is one of my favorite recipes - the taste of fried garlic and hot pepper makes me feel like I am on the Mediterranean coast.
I love to visist the fish markets abroad- I love the smell of the fresh caught fish, the colors and shapes of the different species, all the inviting voices of the vendors. And when they allow me to make a picture of them, I am even happier.

Mussels saganaki (μύδια σαγανάκι)

Everytime I want to feel the taste of the sea, I buy blue mussels. I love to scrub and clean their dark blue shells, to check for broken ones, to put the good ones into the pot. I like the smell of my kitchen in the short 10-20 minutes of preparation and long hours after that. And I always enjoy sipping their juices from the shells and feel their salty broth as a juicy message from the sea. I know, female mussels are orange, male mussels are light yellow. Their colors match perfectly the red of tomato sauce and the white of Feta cheese. But this is not the main reason I prepare often mussels saganaki. The taste of this dish is unforgettable. Along with garides saganaki, this is a very popular dish in the fish restaurants of Northern Greece. And also in my home. As with many other dishes, I increase the spicyness by adding lots of hot peppers and chili flakes, but you can adjust it according to your taste.

Spinach and yogurt dip (Ispanak borani)

Yogurt dips and salads are highly appreciated in the Eastern and Middle-Eastern countries. Yogurt provides the dishes with a rich and cooling taste, which is important in places with hot climate and harsh sun. Borani is a persian cold dipping sauce, based on yogurt and vegetables. As long as tsatsiki it goes well with meats or fried potatoes, but also just with a slice of toasted bread.

Asparagus with Feta cheese: green for my eyes and soul

I love asparagus. It fills my eyes with green and makes me feel spring with all my senses. And this is one of my favorite asparagus dishes, proper for the light diet-intended evenings. With a glas of white wine. Or two. Or... it's up to you.

Grilled Portobello mushrooms with ricotta and garlic

Do you like the taste of Portobello mushrooms? I do. But most of all I like the name. Portobello.
Sounds like something interesting, trendy, exclusive, not for everyone. It reminds me on the vibrant Portobello road in London with its cosmopolitan atmosphere and colorful houses. The antiquity market held every Saturday and the Portobello film festival every August, Notting hill with its high quality housing and private parks. Fashionable place, fashionable name.
Now the naked truth. Name portobello is a marketing trick. Portobello is a mature form of crimini or white button mushrooms - plain unexpensive mushrooms with a trivial name. If a crimini has a diameter of cap more then 10 cm (4-6 inches), cap becomes a flatter appearance and mushroom is too big to be packaged as a crimini. That is the time Portobello arises - good tasting mushroom with a dense meaty texture. What a difference a name makes.
The power of marketing has always make me wonder how little things change the whole perception. One of the gourmet items born on the desks of the marketing specialists, hired to raise the sales of a product. Anyway, it is a really tasty mushroom. The taste is earthy and rich and vegetarians like it as a good meat substitute.
Served with ricotta cheese and buttery garlic, it is a good company for a glas of white wine.
